Almonds, mixed nuts, drenched in sugar syrup, familiar from childhood with the roasting, the "son" of solid paste. It was from this recipe that the grilling mass was once obtained. Grillage is a French dessert made from roasted nuts with sugar. Confectioners refer to grillage candy caramel type, dividing it into hard and soft. Grillage mass is obtained by melting sugar or sugar-honey syrup and adding nut kernels to it. This grill should meet the following consumer properties: do not get stuck in the teeth, do not get bitter, without foreign tastes.
Lightly fry the almond flakes.
Sugar and water are well stirred and put to cook on a slow fire constantly stirring.
Cook the caramel until soft. You can check the readiness of caramel by dropping a couple of drops in a glass of cold water or by dropping it on a cold plate. Approximate cooking time of caramel is 5-7 minutes.
When the caramel gets its characteristic Golden color, pour in the almonds warmed in the microwave and stir well.
Quickly remove the heat and pour on baking paper greased with odorless vegetable oil. Allow to cool completely.
Break it into pieces. You can use it for making pralines, creams and decorating cakes and rolls, or you can just crunch, because properly prepared grillage is fragile, crunchy and very very tasty.
From this number of products is obtained 150 gr. ready grillage.
Store in a tightly closed container in a cool dry place, I have, however, does not live up to this stage!
