Eggplant, Herbs and Pomegranate Snack Recipe
I love eggplant. You can create endlessly with them. Here's one of my favorites. Very lightweight. This is a separate dish. Cold (optional and hot) appetizer or side dish for meat or chicken.

  1. Slice and salt the eggplant. Fry on 2 sides in a grill pan (grilled open, on any type of grill available to you)))

  2. Fold in layers. As you fry the eggplant, sprinkle a little with olive oil already in the bowl and sprinkle each layer with finely chopped herbs, garlic and pomegranate seeds.
