Peel the eggplant, pepper and onion and cut into pieces ~2 cm.
Peel and finely chop the garlic.
Put everything in a large bowl, add salt, ground black pepper and olive oil. Mix everything well and put it in a baking dish. Put the form in the oven, preheated to 200°C, and bake the vegetables until ready. During cooking, it is advisable to mix them 2-3 times.Transfer the finished vegetables to a blender bowl.
Chop to the desired consistency: either until smooth, or to small pieces.
Taste it, add salt or pepper if necessary.I divided it into two parts, adding chopped coriander to one and ground chili to the other.
Put it in the refrigerator and let it stand for an hour.
Serve with toast or crackers.
