Abolu pankukas is an apple pancake, a favorite in all of Northern Europe! The ideal option is the German version, but Latvia has created its own. And these are two different “beasts”: the German version is more like a popover bun with apples, and the Latvian version is a real pancake, albeit not transparently thin, but it is a pancake, tender, airy, surprisingly delicious! And although pancakes are baked on cream, hard sweet and sour apples make them almost weightless.
