Onions in cooking are used in raw, boiled, fried, pickled and salted types. Although to preserve all the useful properties, minimal thermal exposure is recommended. Onions can be both a flavor seasoning for the main dish (and it is combined with meat, fish, rice, potatoes, flour products, cottage cheese, and other vegetables), and the basis of the recipe. Many national cuisines have their own “branded” culinary products, in which onions can be called a key ingredient: French onion soup, British onion pie, etc. There are some culinary tricks that will allow you to cook this product (or a dish based on it) as tasty as possible: If you add a little granulated sugar to the oil during frying, the onions will brown better. So that the chopped onion does not burn during sauteing, before sending it to the frying pan, you should roll the “straw” in flour. Then it will simply acquire a reddish hue. Onions can be added to minced meat not only to improve the taste, but also to extend the shelf life of the meat part. To get rid of onion bitterness in the manufacture of salads, raw onions are slightly scalded with boiling water, and hands and knife are smeared with wet salt.
When choosing onions, preference should be given to dense clean heads, without damage, holes and stains. The sweetness-bitterness of a vegetable depends not only on the variety, but also on the length of daylight in the place of cultivation (southern onions are considered sweeter), the mineral content of the soil, the softness of the climate, the abundance of precipitation, etc. For example, with a large amount of annual precipitation, sulfur is actively washed out of the soil, which creates prerequisites for growing a sweeter vegetable. However, in general, it is believed that white varieties have a stronger flavor and are better suited for filling pies, red and purple ones have a sweet taste and are well combined in salads and marinades, and the Spanish variety is softer and sweeter, as well as onions with yellow–brown husks are better suited for frying.
All the cheese soups I love! Very creamy, simple, but without meat, vegetable! The softness, the velvet of it! And the cabbage in it is colored! Onions, carrots, zucchini! You know, the first dishes have been sorted out!
The soup made in India is probably the simplest. It is made from legumes: peas, lentils or small beans. Vegetable soup is also very often prepared. Today I decided to combine both of these options and offer you a soup made from vegetables. And, of course, it will be very spicy, with a set of spices and therefore rich in taste and aroma.
I love soups. For me, it’s just a huge unploughed field for improvisation. I cook from everything that comes to hand. Here and today is another variation… Fast, satisfying and very tasty!
I cook fish terrines infrequently, unlike meat ones, because my husband is a little fan of fish cooked in this way, although in general he loves fish very much. But, on the contrary, I love fish terrines, casseroles, souffles and everything that contains fish. But always serve this or a similar terrine on a festive table and do not leave a crumb. Carp or silver carp is not everyone’s favorite fish, and there are a lot of bones in it, and the meat is sweet, but baked in a terrine and seasoned with soy sauce, it’s something, I’ll tell you.
I invite you to my soup. It’s summer now, it’s warm and even hot. Soup can be eaten both warm and cold. Cooking is easy and fast. The aromas of vegetables and herbs will not leave you indifferent to the soup.
“This terrine is a wonderful recipe for a classic French dish that has completely ruined the modern food industry.” Therefore, we will prepare it ourselves, especially since it is not so difficult. I suggest starting with a liver supplement like olives, instead of the usual carrots for many.
I offer you a recipe for soup, which was fed by Spanish grandmothers to their grandchildren. The soup turns out to be thick, rich, but at the same time low-fat and easy for the stomach. Cauliflower is a storehouse of trace elements, and ginger protects against colds.
Cooking these mushrooms takes about 15 minutes. This recipe is convenient when you need to quickly put it on the table and need some kind of snack. You can cook these mushrooms first and then do the rest of the dishes. There is no danger in this, because champignons are often eaten raw, and in this recipe they are salty and with a crispy crust turn into tender meat, combined with onions, garlic and dill forming an excellent snack.
