Despite the fact that chili con carne is associated with Mexico, it actually originated in the southwestern United States, where a mixture of cultures gave rise to a new cuisine called “Tex-Mex” (in other words, Texan-Mexican). Jambalaya is a Louisiana dish from New Orleans. Initially, it appeared as an attempt by the Spaniards to cook their favorite paella in the absence of saffron. Tomatoes were used as a substitute.
