1. Peel the avocado and knead half of the pulp with a fork. We shift the avocado pulp into a blender, add salt, lemon juice, puree the mustard. 2. Add the egg, olive oil and vegetable oil to the avocado puree. 3. We lower the blender all the way to the bottom and so that the yolk is inside the cell with the knife. Turn on the blender for 5-10 seconds, do not raise it. Then raise the blender up and down and beat for one minute. We put the mayonnaise into a jar, close the lid and store in the refrigerator.
