Grate the carrots on a coarse grater. Fry the crushed nuts in a pan and set aside. Cut the avocado pulp into identical pieces and put them in a bowl with orange juice.
Before serving, mix the carrots, nuts (leave a little for decoration), mix well. Mix the dressing and pour over the carrots and nuts. Drain the orange juice from the avocado. Add the avocado to the carrots and mix gently. Garnish with the remaining nuts.
