Potatoes baked with meatballs in the oven are a delicious and original dish. There is nothing complicated in its preparation. This dish can be prepared both for a festive table and for an everyday dinner.
For cooking, I take potatoes pre-boiled in a uniform.
Chop the tomatoes in a blender. It is better to remove the skin from them, but if there is little time, you can not remove it.
Pour vegetable oil into a bucket with a thick bottom. Then pour the chopped tomatoes there.
Add finely chopped (or grated) garlic, 1/2 tsp salt, season with Provencal herbs.
Cut the gherkins into slices. I add chopped gherkins to the ladle.
Minced meat (I was just scrolling through the meat) add salt and pepper to taste, add finely chopped onion, 2 tablespoons of milk. You can add a little white bread. i.e. we make the usual minced meat for meatballs, which you are used to.
Mix the minced meat well.
I form 12 meatballs, 3 pieces for each potato half.
Pour the sauce with a ladle and put it on medium heat, keep it for 2-3 minutes (until boiling).
Then I dip the meatballs in the sauce. Simmer the meatballs together with the sauce for 5 minutes.
While the meatballs are cooking, prepare the potatoes. I peel it and cut it in half lengthwise. Take out the middle of the potato with a teaspoon so that the boats turn out.
I spread the potato halves on a baking sheet covered with foil and sprinkled with a small amount of vegetable oil.
After 5 minutes, remove the meatballs from the sauce and place them tightly on the potato halves.
Then spread cucumber-tomato sauce on top and sides with a spoon.
Put the potatoes in a preheated 200 degree oven for 15 minutes.
Then carefully remove the baking sheet and sprinkle the potato halves with cheese grated on a fine grater.
And put it back in the oven. Now for 5 minutes on maximum heating mode.
