Paste "Hummus" Recipe
A favorite dish of Arabs and Jews. Today I want to present you an absolutely amazing Mediterranean dish "hummus"! It is not difficult to prepare, but, however, some unfamiliar ingredients may be required. I will try to tell you what each ingredient gives separately and how it can be replaced so that each of you can cook this miracle.

  1. So let's get started! First we need to soak 2 cups (450 g) of chickpeas overnight, but first we need to say a few words about it. Chickpeas are a legume plant resembling peas, very rich in protein, vitamins and minerals. If you care about your health and the health of your family, be sure to buy it! To prepare a classic hummus, we will need chickpeas, but, in extreme cases, it can be successfully replaced with ordinary peas or even beans. In the water in which we will soak chickpeas (or other beans), add a teaspoon of baking soda. This will significantly soften the protective skin of the beans.
    So let's get started!

  3. At the end of cooking , drain the remaining water and add the following ingredients to the finished peas: 1. Juice of one lemon 2. A few cloves of garlic 3. A bunch of greens (preferably parsley or cilantro) 4. One teaspoon of salt (with a slide) 5. Spices as desired and in the desired amount (paprika, black pepper, chili pepper, cumin (cumin), coriander, white pepper, etc.) Mix it all thoroughly and pour it into a blender.

  4. Now I would like to say a few words about Tahini. Tahini is a thick paste made from sesame seeds. Recently, it has been sold in many stores, but, despite this, it is not familiar to many people. You can cook it yourself by frying sesame seeds in a frying pan until a pleasant smell appears and grinding in a blender with the addition of olive oil until a homogeneous mass is obtained. If you do not have the opportunity to buy tahini or sesame seeds, then prepare this paste from walnut kernels. Of course, this is excluded in the classic recipe, but even such improvisation will not spoil the taste of the final product. The taste will not be classic, but it will still be amazing!
