Fragrant, hearty, incredibly delicious potato pie with cheese can be safely served during a festive feast, as well as cook it for the weekend when everyone gathers at the family table. A ruddy, crispy crust is obtained in this amazing baking, somewhat reminiscent of pizza. It is better to bake hard cheeses – parmesan, cheddar. Garlic can be added to such a pie to enhance the taste.

Ingredients
Dough:
- 250 gram Flour wheat / Flour
- 1 teaspoon Dry yeast
- 1 piece Chicken egg
- 1 tablespoon Sugar
- 3 tablespoons Melted butter
- 130 ml Milk
- 1 teaspoon Salt
- 1 piece Egg yolk
Filling:
- 2 pieces Potatoes
- 130 gram Mozzarella
- Green onions
- 1 tablespoon Olive oil
- 50 gram Parmesan
- Black pepper to taste
- Sweet paprika (ground) to taste
- Garlic powder
Instructions
- For the dough, mix the sifted flour with high-speed yeast, sugar and salt.
- Make a recess in the flour mixture, pour in warm milk, melted butter and beaten egg.
- Mix well until smooth. The dough should be soft and elastic. Knead the dough better with a wooden spoon.
- Cover the dough with cling film and put it in a warm place for 30 minutes.
- While the dough is cooling, boil the potatoes in a uniform.
- Then peel the potatoes and mash them into a puree.
- Add grated mozzarella cheese, finely chopped green onions to the mashed potatoes, season with ground black pepper, red paprika, add garlic seasoning and salt to taste. Mix well.
- Prepare the filling.
- After 30 minutes, knead the dough, put it on a floured table and immediately roll it into a ball.
- Then transfer the dough to baking parchment (because it will be more convenient to transfer the cake to a baking sheet on parchment) and roll out into a circle-shaped layer.
- On the rolled out layer of dough, make small incisions along the edge of the circle.
- From the sliced dough along the edge of the pie, weave a pigtail.
- Place the finished pigtail on the edge of the pie.
- The edges of the pigtails are well fixed, and the base of the pie is pricked with a fork.
- Brush the cake with olive oil.
- Put the potato filling on the dough and spread it evenly over the pie.
- Grease the braided part of the pie with yolk. Grate the parmesan cheese on a coarse grater and sprinkle the filling over it. Using parchment, transfer the pie to a baking sheet.
- Bake the pie in a preheated 180 degree oven for 20-25 minutes.
- Cool the cake a little and serve warm. Enjoy your meal!
