Cut the onion into half rings, carrots into thin cubes. Put the vegetables to fry in olive oil for literally 3-4 minutes. Meanwhile, peel the potatoes and grate them on a coarse grater. Add to the onions and carrots. Mix it.
Cut the bell pepper into thin strips, chop the garlic finely. Add everything to the potatoes, mix well. Add salt, pepper and, if desired, a pinch of hops-suneli. Stir and fry until soft. Sprinkle the finished dish with fresh chopped herbs.
