- Soak the gelatin in cold water, let it swell. Then add the gelatin juice (or water, syrup, compote), put it in a water bath and, stirring, heat until the gelatin is completely dissolved, at this stage taste it and, if necessary, add sugar. On the gelatin package it is indicated how much liquid to add, I add less than indicated to get a stable jelly.
