A square of Lamb is a tender meat on a thin rib bone. For this dish, only young lamb is used. The flesh of the lamb is devoid of all disadvantages, so it turns out soft, appetizing, odorless and dietary.
Choose a young lamb with thin bones and a minimum amount of fat around the bones!
For 4 persons you will need:
-- Lamb loin (1.5-2 kg)
- Olive oil
- Sea salt, pepper, garlic
Wash the ribs with water, cut off the excess fat
Rub with olive oil, add thyme, salt and pepper and leave for 30 minutes. On the average heat of the coals, fry for 2 minutes on each side, including the ends, transfer to indirect heat and keep the lid closed for another 5-7 minutes. Next, open the cut and rather eat!
