Liver Cake "Surprise" Recipe
Your guests are unlikely to be able to guess the composition of the filling, it will be a surprise for them. You won't surprise anyone with a liver pie, but you can still dream up with the filling. The idea of the filling was born from a friend who brought my favorite pineapple from Thailand. On any of my festive table there are always dishes with pineapple. I decided to cook something new. It turned out very tender and juicy.

Ingredients
For liver pancakes:
- 500 gram Beef liver
- 2 pieces Onions
- 500 ml Kefir 2,5%
- 3 pieces Chicken eggs
- 3 tablespoons Flour wheat / Flour
- 1 teaspoon Soda
- 1 tablespoon Vinegar
- 2 tablespoons Vegetable oil
- Salt to taste
- Black pepper to taste
For the filling:
- 300 gram Pineapple pulp
- 100 gram Hard cheese
- 1 clove Garlic
- 8 tablespoons Mayonnaise
For decoration:
- 4 pieces Egg yolk
- 2 tablespoons Mayonnaise
Instructions
- 500 g of liver cut into slices, 2 onions - circles. 500 g of liver cut into slices, 2 onions - circles.
- Place a small grate on the meat grinder. Pass through the meat grinder alternately liver, onion, liver, onion, and so on. Add 3 eggs and 200 g of kefir (2.5%) and mix.
- Add 1 tsp. soda, slaked in 1 tbsp.l. 9% vinegar.
- Add 3 tbsp. l. with a mound of flour, salt and pepper to taste, mix. The dough should turn out like pancakes, but a little thicker.
- Products for filling. Pineapple is better to take whole, but you can also canned.
- Divide the pineapple lengthwise into 4 parts. Separate the pulp from the peel and cut out the hard core. As a result, 3/4 of the pulp was used for filling.
- Grate the pineapple on a coarse grater, flip it on a sieve to drain the juice.
- Grate the cheese on a coarse grater. Combine pineapple with cheese, add 6 tablespoons with a mound of mayonnaise, 1-2 small cloves of garlic. It is better to add a little garlic and try it (to your taste). Garlic should not interrupt the taste of pineapple.
- Grease the pan with a thin layer of vegetable oil. Pour out a portion of the dough and spread it with a spoon over the entire form. Fry.
- Flip the pancake to the other side and fry it quickly.
- So, bake 8 pancakes, adding vegetable oil to the pan as needed.
- Put the pancakes on a platter and smear with the filling (2 tbsp.l.). Then put the next pancake, smear with the filling and so on.
- Carefully trim the uneven edges with a knife, lubricate the sides with mayonnaise and sprinkle with boiled egg yolk. Let the cake soak and decorate to your liking. I made a flower out of egg white and decorated it with melissa leaves.
