This flavorful Thai salad with peanut dressing can be made from different types of noodles and vegetables (I made a salad with rice noodles, also suitable for soba, brown rice noodles or Linguini paste. Vegetables can also be varied, cabbage, carrots and radishes are good).

- 200 gram Noodles (I have rice)
- Ginger to taste
- 2 cloves Garlic
- 1 tablespoon Peanut paste
- 2 tablespoons Sesame oil
- 2 tablespoons Soy sauce
- 2 tablespoons Vinegar
- Green Onion
- Cilantro to taste
- 1 piece Carrot
- 1 piece Bulgarian pepper
- Peanuts (fried)

Instructions
- Cook the noodles according to the instructions on the package and cool. Prepare the dressing by mixing ginger, garlic, peanut paste, sesame oil, soy sauce, and rice vinegar in a blender. Mix the dressing with the noodles. Add thinly sliced vegetables (I have carrots and bell peppers), mix. Before serving, add green onions and coriander to the salad and sprinkle with roasted peanuts. Garnish with a slice of lime.
