Most squid salads have eggs and cheese in their composition and are dressed with mayonnaise. They are certainly very tasty and satisfying. I want to offer a lighter version of the squid salad! In the season of asparagus, be sure to prepare such a salad-bright, fresh, light and healthy!
Peel the squid, rinse and boil in salted water for 3-5 minutes, cool and cut into rings.

For the dressing, mix soy sauce , mustard, lemon juice and olive oil.
Put all the ingredients in a bowl and pour over the dressing, mix gently and put in a salad bowl.
This salad can be served in a common salad bowl or on serving plates - so it looks more impressive. Arrange the uncooked salad on small plates, pour a little sauce on each plate. A little "powder" with freshly ground pepper and put a sprig of greens.
