Salad with Squid Recipe
Most squid salads have eggs and cheese in their composition and are dressed with mayonnaise. They are certainly very tasty and satisfying. I want to offer a lighter version of the squid salad! In the season of asparagus, be sure to prepare such a salad-bright, fresh, light and healthy!
Ingredients
- 150 gram Tomato
- 150 gram Squid
- 100 gram Asparagus
- 3 tbsp Olive oil
- 2 tbsp Soy sauce
- 1 tbsp Lemon juice
- 1 tsp Mustard
- Black pepper to taste
Instructions
- Cut the tomato into slices.
- Peel the squid, rinse and boil in salted water for 3-5 minutes, cool and cut into rings.
- Asparagus (fresh) boil in boiling salted water for 1 minute, immediately pour cold water (to preserve the color). Dry and cut into pieces In the absence of fresh asparagus, you can use frozen-it does not need to be boiled - just defrost in the air and use in a salad.
- For the dressing, mix soy sauce , mustard, lemon juice and olive oil.
- Put all the ingredients in a bowl and pour over the dressing, mix gently and put in a salad bowl.
- This salad can be served in a common salad bowl or on serving plates - so it looks more impressive. Arrange the uncooked salad on small plates, pour a little sauce on each plate. A little "powder" with freshly ground pepper and put a sprig of greens.
