This is my favorite snack on the holiday table. The secret is spinach. It does not add any particular taste to pancakes, but gives an interesting color and, most importantly, extraordinary softness and lightness to pancakes. Well, in combination with red fish and cheese - yum)

- Make dough for pancakes. Beat eggs with a mixer with salt and sugar. Then add the milk and spinach, after - pour the sifted flour little by little. Beat with a mixer until fluffy homogeneous mass, without lumps. At the end-add sunflower oil and beat again a little. Dough is ready. Put it to rest for 20 minutes.
