Bake the pumpkin in advance. This can be done along the way,
cooking something in the oven or especially for this salad.
It is also possible to steam the pumpkin.
Cool completely. Cut into 1.5 cm x 1.5 cm squares.
Wash the tomatoes, cut into medium pieces.
Peel the onion and cut it into thin half-rings.
Wash, dry and chop the coriander greens.
Put the tomatoes, olives, pumpkin, onion and coriander in a bowl.
Season with olive oil. Mix well.
Transfer to a salad bowl.
Add a handful of cranberries and salt.
