Autumn is a fertile time for vegetables. Their abundance is pleasing to the eye. One of the easiest ways to prepare a very tasty and healthy side dish, or an independent dish, for dinner is to make baked vegetables in the oven. They turn out to be insanely delicious, healthy, and the number of servings allows you to provide yourself with food for several days ahead. And the most important advantage of this dish is that you practically do not need to follow its preparation.
Peel the potatoes and cut them into pieces, 5 mm thick and 2-3 cm long. Cut all the vegetables quite large. Then you will not have to catch them with a fork on the plate when you eat dinner, and the dish will look beautiful and rich.
Peel the beets and cut them into 5 mm pieces.
Carrots, cut into 5 mm pieces.
Separate the cauliflower and broccoli into florets.
Cut the pumpkin into cubes of any shape. Peel the pepper from the seeds and cut into 2 cm thick strips.
Place all the vegetables on a baking sheet. When unfolding, try to make empty spaces. If the vegetables are laid side by side, their juices will mix and they will turn out too soft. To make the vegetables bake as delicious as possible, they should dry out a little.
Sprinkle them generously with vegetable oil, salt and pepper. Add your favorite spices. Place in a preheated 180 degree oven for 40-45 minutes. It all depends on the characteristics of your oven. After 30 minutes, from the start of cooking, you can look into the oven, checking for readiness.
you will bake vegetables, cover with good baking siliconized paper. Not with foil, not on a clean baking sheet, but with paper!!!
