Recently I was treated to eggplant on this recipe and I fell in love with them. I liked the combination of flavors. Today I decided to share it with you. They will be in a spicy lemon-honey marinade with garlic. And on the second day the eggplant was even better
Everything is very simple and fast.
These are the ingredients we need.
Wash eggplant, clean and cut each lengthwise into 8 parts.
Transfer to a colander, salt, mix and leave for 20 minutes to let the eggplant juice and left all the bitterness.
At the end of the eggplant can be slightly squeezed.
Fry in vegetable oil on each side until tender and spread on paper towels to absorb excess fat.
Prepare the sauce.
Honey is slightly heated in the microwave. In it, add 3 teaspoons of lemon juice, salt.
Squeeze out the garlic.
Here already all on desire. You may want more acid, or Vice versa. For me, the proportions I gave were perfect.
I shift the eggplant on a dish on which I will serve, pour the sauce on top, sprinkle with herbs.
Do not worry, the lower layers are also well marinated.
And it is desirable to leave for 20 minutes, so that all tastes are well combined with each other.
