Kohlrabi Salad with Cucumber Recipe
A juicy and refreshing salad. In terms of the presence of calcium, kohlrabi is comparable to sour-milk products, and in terms of potassium and magnesium, it surpasses apples and cereals. "Stem turnip" is rich in vitamin C, which is not less than in citrus fruits.

  1. Wash vegetables and herbs. We weigh the required number of them. Grate kohlrabi on a grater. Crumble the cucumber and pepper in small cubes, and the onion, herbs and olives-finely. Mix all the ingredients in a deep container. Add cold-pressed vegetable oil (in my case from avocado), apple cider vinegar, salt and ground black pepper to taste. Mix it again. Note: if you plan to decorate the salad with cucumber, then its amount must be increased.
