It can be prepared both with the addition of flour and without it, but in the first version, the cookie holds its shape better. If you have never cooked cookies with starch, then as an experiment you can reduce the amount of ingredients by half. I liked the cookies, they turned out to be crumbly, not cloying and very tender.
