Everyone liked the dough from Laurent pie so much that by the weekend I decided to bake a biscuit, based on the recipe of Kish. Replacing the nuts on the "aged" cheese, I got a new, very tasty combination, which perhaps later will be used in the preparation of the pie. The cookies were eaten in a few minutes (even those that are slightly burnt), ideal for a snack base!
Egg wash. Break in a bowl, add Basil and salt, mix all the beaters.
Butter cut into small cubes, add to egg and all carefully randomize, best eating with a fork. Add grated cheese and mix again, the mass should be slightly crumbly and soft.
Add some flour and start kneading the dough, at this stage it is best to do it with a spatula.
When the dough begins to acquire a more homogeneous mass, pour the remaining flour and knead the dough with your hands (pre-wearing gloves).
- Knead the dough until it stops sticking to your hands.
- Roll the dough into a ball. Wrap in cling film and refrigerate for an hour.
After the time, sprinkle the table with flour and roll out the dough. Cut small circles.
Put the circles on a baking sheet covered with parchment and bake in a preheated oven to 280 degrees for 10-15 minutes.
Ready galette removed from the pan and cool on a flat surface.
