In a mortar, grind nuts, garlic, a pinch of salt and 3 tablespoons of olive oil into a paste.
Spread the nut paste evenly over the bread. Put the bread on a baking sheet and put it in preheated to 180 degrees. oven for 10 minutes . Let it cool down a little.
While the croutons are being prepared, cut the pears lengthwise into slices 5-7 mm thick, cut out the core with the seeds.
Put the pears in a container, add 1 tbsp. l. olive oil, juice of half a lime, a little salt, mix gently.
Fry the pears on both sides in a hot grill pan until characteristic dark stripes form (2-3 minutes on each side).
Put the slices of pears on the croutons, crumble the cheese on top.
Add salt and pepper to taste. It can be served hot or cold.
