- Step 1 Cut the eggplant into rings about 1.5 cm thick and fry on the grill, then put it on a baking sheet covered with parchment paper and drizzle with soy sauce. Step 2 Chop the mushrooms finely and fry in a pan with oil until Golden. Cut tomatoes and onions into thin rings. Grate the cheese.
