Even if you don't want to bother with such a dessert performance, I highly recommend the dough that is used in this recipe. You can just try baking cupcakes by putting pieces of your favorite fruits or berries in the dough. It is incredibly tender, porous, moist!
Beat the softened butter with 30 grams of sugar and salt.
Add two yolks and vanilla extract.
Add the flour sifted with baking powder and mix.
Whisk the whites with the remaining sugar (40 grams), introducing it in 2 doses, until fluffy.
In 2-3 doses, introduce the proteins into the bulk and mix gently until a homogeneous mass is obtained. Add jam. Jam you can take the one that will be best combined with the filling of your baskets.
Using a pastry bag (this is more convenient), fill the molds by 1/3 of the volume. Lay out pieces of fruit (or berries).
Fill the molds with dough.
Bake until cooked at 180 degrees.
As soon as the cupcakes got cold, I couldn't wait to try them. One cupcake did not wait for the filling. Here's what it looks like on the rift. The taste is excellent!
The filling, in fact, can be any filling, cream, fruit or berries. It all depends on your preferences. But it is not difficult to make this filling and not very moist, because the cupcakes themselves are tender. When you try to take them with a heavy filling, you risk not carrying them to the dish. Or use a spatula.
