Wash the ribs, blot them with a paper towel. Cut between the ribs. Sprinkle with a mixture of spices, red hot pepper and cumin. Carefully rub the spices into the ribs. I use a seasoning for meat for barbecue with smoke. The set includes spices for meat and a separate bag with beech and alder.
Pour the beech and alder into a bowl and fill with water. Leave it on for 30 minutes.
Place the ribs on the grill and fry over hot coals for 10 minutes.
Then sprinkle the soaked wood chips on the hot coals. Fry the ribs for another 10-15 minutes.
