- Roasted sesame is ground in a coffee grinder or in a special grinder to fine crumbs. Add a spoonful of olive oil and whisk. So we get Tahina. Since we are going to use an immersion blender to prepare hummus, I decided to simplify the task and simply mixed sesame crumbs with olive oil without whipping.
- Put the tahini in a suitable dish, add the boiled chickpeas, spices and salt. Mandatory for hummus are: lemon juice, olive oil, garlic and cumin (cumin). Other spices are at your request, but chickpeas are very good in combination with coriander and paprika (smoked is great), you can also add hot pepper. The most important condition is that all spices should be young so that no hard pieces come across in the hummus.
- With an immersion blender, gently start chopping chickpeas and mix the ingredients. Gradually add olive oil and lemon juice. These two components are responsible for the balance of taste and consistency of hummus, turning pea paste with bitter tahini into an exquisite delicate and spicy delicacy with a nutty taste and notes of lemon.
- You can serve hummus in a salad bowl or a bowl, or, after holding the salad bowl for 15-20 minutes in the freezer, cover it with a serving plate and turn it over, as I did. Rotating the plate with one hand, use the other hand to draw the grooves with a fork. A small depression is usually made on top in the center of the hummus, into which olive oil is poured. Pour olive oil and lemon juice over the hummus. Sprinkle with paprika and chopped fresh herbs, decorate as desired and fancy and serve. Hummus is served with tortillas, crackers, bread and even as a side dish to meat. Enjoy your meal!
