Beat the cold cream with a mixer until the first peaks, then gradually pour in the condensed milk, continuing to beat, add vanilla sugar. The amount of condensed milk I wrote is approximate, try it, maybe you will need more or less.
When we beat the cream with condensed milk, add the cream cheese and mix it again with a mixer.
The cream is ready. In a microwave oven or in a water bath, melt the swollen gelatin and pour a thin stream into the cream with a mixer.
I took a rectangular shape and covered it well with foil, you can take a round cake baking dish. Wash and dry the berries or fruits. I had blueberries and raspberries, but you can take any to your taste. All the preparations are made, we are collecting the cake.
We put a small layer of cream on the bottom, berries on top.
Then we spread the pieces of cookies. I took Savoyardi, which is used to make Tiramisu, but you can take any other sponge cookies. I did not dip the cookies in coffee or milk, it has already become soft, but if you want, you can dip it.
On top of the cookies, we spread one more layer of cream, smooth it out. The cream hardens quickly, so we work quickly. We spread the berries on the cream.
Cover the berries with the remaining cream, smooth them out.
Spread the cookies on top and press it a little into the cream. This will be the bottom of the cake.
We cover the cake with foil, film on top and send it to the refrigerator. I did it in the evening for the night, but if you need it urgently, you can put it in the freezer for 1-2 hours.
The next morning, carefully turn the cake over, remove the foil and decorate to your liking. I poured melted chocolate over it and decorated it with the remaining berries.
