Very tasty stuffed peppers! It is not heavy, satisfying, without meat... A good alternative to a bachelorette party or a fast, if you replace mozzarella with soy cheese tofu.

  1. Mix 250 ml of tomato juice and 100 ml of broth, add salt. Cook until the rice is ready. Cut the bell pepper into halves, remove the seeds. Mix diced tomatoes and mozzarella, as well as halves of olives with the finished rice. Lightly season with salt and pepper. Fill the halves of the peppers with the resulting minced meat.
