The star anise crushed in big pieces.
Do not confuse star anise with star anise, they are different spices, although they have a similar flavor.
Mix honey and brandy.
Add pieces of star anise.
You can replace the star anise with cardamom, but I haven't tried it yet, so I can't say anything about the taste.
Cut the cheese into cubes.
Put the cheese in a jar or other suitable container, pour the honey-alcohol mixture, and mix gently if necessary.
Close and put in the refrigerator for 48 hours.
Before serving, let the cheese warm to room temperature.
