Wash the potatoes with a brush and cook in boiling salted water until soft. Drain and pour cold water over the potatoes.
Peel the potatoes and let them cool. Grate, mix with beaten eggs, melted butter (2 tbsp), salt and pepper. Add enough flour to make a dough of medium density (so that you can sculpt it).
With wet hands make a round potato cutlets: first, make about 3 tbsp of stuffing a tortilla, put inside a spoon of cheese, connect edges and gently roll into a ball. Roll them in breadcrumbs and fry in vegetable oil until Golden brown on both sides.
