Peel the oranges and cut them into slices about 1 cm thick. Season each circle to taste with Provencal herbs. In a frying pan, heat the olive oil, carefully put the orange (carefully, the oil can be splashed!) and fry on both sides. If desired, you can add honey to the oranges (it tastes better with it, imho!).
Wash and dry the arugula and grapes, and cut the parmesan into thin slices.
Place the arugula on a platter and place the thin slices of ham on top. Add the grapes and olives to the salad. Lay the fried orange and cheese.
