A light summer salad wrapped in pita bread can turn into a great snack at work or on the road, when there is no time for a full lunch. This is a recipe for a snack that is convenient to take with you and not difficult to prepare.
For the salad, we will need fresh vegetables. Tomatoes, sweet peppers and avocado are cut into small pieces, sweet blue onions are cut into strips. We cook hard-boiled quail eggs and cut them in half. Of course, eggs can be replaced with ordinary chicken ones.
Sprinkle with lemon juice, which will complement the avocado well. Salt and vegetable oil to taste.
We spread the mixed salad on a thin pita bread and wrap it in an envelope.
