Turkish Lentil Soup with Mushrooms Recipe
The taste of red lentils is tender and mild. Red lentils contain valuable vegetable protein, fiber, a minimum of fat, omega-3 and omega-6 fatty acids, B vitamins, folic acid, phosphorus, iron, magnesium and calcium, which is especially necessary in fasting.

Instructions
- Wash the lentils.
- Chop the onion, mushrooms (if fresh), grate the carrots on a coarse grater.
- Heat a frying pan, pour oil, add onions, carrots, lightly fry, add mushrooms and fry all together for 5 minutes.
- Add the lentils, cover with water and cook over low heat with the lid closed for 15 minutes.
- At the end of cooking, add salt, pepper, mint and cook for another 1 minute. Whisk the puree in a blender. Pour on plates. It can be served with croutons.
