Bright, hearty, healthy autumn soup for the whole family from lentils with turnips, vegetables and spices. It will warm you up on cold autumn days, replenish your body with all the useful substances and vitamins.
To reduce the cooking time of the soup, I cooked the chicken wings broth in advance. Filled the wings with water, brought to a boil and drained the first broth. I poured fresh water, and the second broth was no longer scum from the chicken meat. Put the onion in the husk, coarsely chopped carrots and parsley root. Cooked for about an hour. Start cooking the soup. Cooking all the vegetables. I'll use turnips instead of potatoes. If you do not have turnips, put the potatoes. Finely chop the onion, as well as finely chop 2 cloves of garlic, and leave three whole. We will put it at the end of cooking the soup. Divide the carrots in half. One part is grated, the second part is cut into small cubes. This is optional. Carrots can be grated all over. Cut the bell pepper into thin strips. I will take a high saucepan for cooking, where I will first simmer the vegetables, and then cook the soup. Use any convenient dishes you want. Heat the oil and spread the onion, gild it. Add the carrots, reduce the heat and cover with a lid, simmer for 5 minutes. Spread the bell pepper and chopped garlic. Simmer for another couple of minutes under the lid.
Cooking spices. Curry and Cayenne pepper. If there is no Cayenne, you can cut fresh hot pepper to taste. I had coriander in grains. I broke it in a mortar. Put the spices in a saucepan and mix. Put the turnips (potatoes) cut into cubes, still languish for 3 minutes. replace the Turnips with potatoes if you do not have turnips available at the moment, but you want soup! Now it's the lentils ' turn. I have crushed red lentils. It is prepared very quickly. You can use any lentil. Let the lentils soak in all the spicy vegetable juices.
Pour the hot strained broth. Bring to a boil and cook everything until the lentils are ready. It took me 20 minutes. At the very end of cooking the soup, we need a tomato and whole cloves of garlic, Bay leaf. Remove the skin from the tomato. We cut the tomato crosswise, put it on a skimmer and send it to boiling water for 1 minute, then easily remove the skin from it. Cut the tomato into a small cube. Put the tomato, garlic and Bay leaf in the soup. Cook for 3 minutes and remove the soup from the heat.
The soup is ready for dinner.
Pour on plates. Add the chopped greens and spread the pieces of boiled chicken, disassembled from the bones. Eat! It is very tasty, satisfying and healthy!
