Marshmallow "Cherry" Recipe
This is my first experience with marshmallows in particular and agar-agar in general. I really liked the result! Eating agar is not scary! I made marshmallows for my mom's anniversary. The guests were delighted! Husband and daughter are waiting for marshmallows, prepared exclusively for them, which they will not share with anyone else!
Instructions
  1. I had a package of frozen pitted cherries weighing 300 grams. I completely defrosted the cherry on a sieve, the liquid glowed and there were exactly 200 grams of cherries left. Cover the cherries with a tablespoon of sugar and put on fire. Bring to a boil and cook for 5 minutes.

  4. Fill the agar-agar with water and leave for 10 minutes. Then bring the agar to a boil over low heat and add 230 grams of sugar to it. Bring to a boil again and cook for 5 minutes, stirring constantly. Remove the resulting syrup from the heat.

  5. Then everything happened quickly for me, so I took only one photo, on the left, on the right I continuously beat the mass. Therefore, I apologize for the quality of the photos. Add half of the protein to the cooled cherry puree and beat the mass until a homogeneous mass is obtained and its volume increases (1-2 minutes).

  6. Continuing to beat, add the second half of the protein. The mass will noticeably turn white and even increase in volume. Without stopping whipping, pour in a thin stream of hot syrup with agar.

  7. It is recommended to beat up to t 38-40 degrees. I delayed this process a little, the thermometer showed 36 degrees.

  8. Put the marshmallow mass using a pastry bag on a sheet of baking paper and leave for a day in a well-ventilated room. My husband couldn't resist - after about 6 hours he ate marshmallows! The marshmallow shape holds up perfectly!
