Grate the pumpkin on a coarse grater, but any one will do.
Prepare the dressing:
squeeze out the garlic, mix with olive oil, raspberry vinegar, soy sauce and mustard.
If you use onions (instead of garlic), then cut it into pumpkin in half rings.
Naturally, everyone can diversify the salad to their taste, but I really like the idea of eating raw pumpkin - it's delicious, beautiful and healthy.
