Wash and dry the eggplants, you do not need to clean them. Remove only the tails.
Cut the eggplant into thin slices.
Then brush the slices with vegetable oil.
Now prepare the breadcrumbs for eggplants: in a bowl, pour the breadcrumbs, add grated hard cheese, salt, ground black pepper and finely chopped parsley.
Mix everything well.
Roll the eggplant in the prepared breadcrumbs on both sides.
Transfer the eggplants to a baking sheet lined with baking paper. Put the remaining breadcrumbs on each slice of eggplant, if desired, you can sprinkle a little grated cheese. Drizzle a little oil and bake the eggplant in the oven at 200 degrees, about 30 minutes.
Serve them hot or cold, breaded eggplant is good in any form.
