Wash the eggplants and cut them into washers about 1 cm thick.
We will need fresh basil, with leaves and stems.
Grind the basil in a blender together with oil, salt and black pepper.
Mix together with the eggplant and let it marinate for 30 minutes.
Preheat the oven with convection or grill at a temperature of 200 degrees.
Lay out the eggplants and bake them until golden brown, look at your oven. Then turn them over and bake for about 5 more minutes.
Thinly slice the mozzarella.
Remove the baking sheet and put the cheese on the eggplant.
Bake until the cheese melts and gets a little golden.
