To prepare the dish we need:
1. Pork loin, which I cut lengthwise to the bone, turned out here is such an accordion, as can be seen in the photo.
2. Spice mix for pork dishes.
3. Pink pepper peas.
4. Pink Himalayan salt
6. Vegetable oil. It must be quite little, about 1 tbsp.
You will also need parchment and foil for baking.
Pink pepper (1 teaspoon) grind in a mortar or with a rolling pin.
In a bowl add pink Himalayan salt (to taste), pink pepper (1 teaspoon), blend of spices for pork (2 tsp), passed through a garlic press garlic (2-3 tooth.). Add 1 tablespoon of vegetable oil. Mix all ingredients.
Carefully grate the pork loin with the prepared spicy mixture. Leave for 30 minutes for marinating.
Then on the table spread a sheet of foil on it to lay out the parchment, on the parchment sheet, place the pork loin. Wrap the pork loin in parchment, then in a sheet of foil and send it to a preheated 170-180C oven. The approximate time of baking is 90 minutes. then expand the loin, slightly push the layers of the loin and continue to bake for another 30-40 minutes. After Browning the loin on the grill until Golden brown.
I want to draw attention, loin better spread on a sheet of parchment so that the bone was at the bottom, and a layer of salsa on top. When melted, the fat will penetrate into the loin and it will be juicy and tasty, and when processed on the grill, the top will have a delicious Golden crust.
Loin can be served with sauce. Have a nice, hearty lunch and dinner!
