Stuffed Vegetarian Peppers Recipe
We have a lot of friends. And we like to gather at a big table to eat delicious food. We have vegetarians, vegans, dieters and men who eat more and more. It is difficult to feed such a company, but it is possible. I present to you a recipe for vegan stuffed pepper, which can become an independent dish for ladies, as well as a good side dish for meat for men.

Ingredients
- 4 pieces Bulgarian peppers
- 150 gram Rice
- 150 gram Cashew nuts
- 150 gram Spinach
- 150 ml Water
- 1 tablespoon Vinegar wine
- 3 cloves Garlic
- 2 tablespoons Vegetable oil
- Salt to taste
- Black pepper to taste
Instructions
- Prepare the necessary ingredients. Boil the rice.
- Peel the pepper from the seeds.
- I really don't like the skin of the pepper, so I prefer to remove it. To do this, I fry the pepper on an open fire on the smallest burner of the stove.
- Then the blackened, bubbling skin is very easy to remove
- Soak the cashews overnight and rinse with warm water before cooking.
- Spinach can be taken fresh or frozen. Simmer it in a frying pan until soft.
- Put the cashews in a blender. Add garlic and vinegar.
- Add water and salt.
- Whisk until smooth. Pour the resulting spinach mixture and cook until the liquid evaporates. There should be very little of it left.
- Pepper half fill with boiled rice.
- Put the spinach-nut mixture on top.
- Put them in a mold and bake in an oven preheated to 180 * C. it took me about 20 minutes. Since there is no peel, they cook much faster.
- For me and my friends, one such pepper is a completely independent dish. But for men, we add meatballs with cherry sauce, they are also served with meat!
