- 1 piece Eggplant

- Step 1 Boil the eggs and cut into slices, cut the eggplant into cubes and fry in olive oil over high heat until Golden, add salt and pepper. Cut the lettuce leaves at random. Cut the tomatoes into slices. Mix mayonnaise with mustard. Step 2 In each plate, put the salad in portions, then tomatoes, eggs and season with sauce, top with fried eggplant.
