Onions cut into thin half-rings. Marinate for 15 minutes in a mixture of soy sauce and lemon juice halves.
Mozzarella cut into pieces (mini-balls - as I have - cut in half). The original recipe used cheese. Parsley divided into leaves. Drain olives from brine.
Watermelon pulp (pitted) cut into fairly large cubes. Sprinkle with dry Provencal herbs.
Carefully combine all the ingredients, add the onion with the marinade. If salad is made with mozzarella and not cheese, perhaps, is it a little salt. If desired, lightly drizzle with olive oil on top.
