I suggest preparing a delicious salad of eggplant, tomatoes and green onions. The salad is very tasty just with fresh bread, you can also fill it with pita or wrap it in a tortilla.
Cut the eggplant into circles about 1 cm thick and fry in a dry pan or grill until soft, then cut into medium-sized pieces.
Dry the almonds on the same pan or grill (I had crushed almonds, if you use a whole peeled almonds, then after frying it should be chopped with a knife).
Onion cut into rings.
Cut the tomatoes at random.
Mix all the ingredients.
Season the salad with olive oil, add balsamic, salt, and pepper. If desired, you can add a couple of Basil and mint leaves to the salad.
