- Soda or baking powder dough fall asleep with flour. Sifting the flour, gradually add it to the dough, whisking to make the sponge cake more lush. The dough should turn out like a thick sour cream. The form is greased with butter and sprinkled with a thin layer of flour. This is necessary so that the cakes are easily separated from the walls of the mold. Pour the resulting dough into the mold. Preheat the oven to 180-200 degrees. And put the currant cake to bake for 40-60 minutes. I watch the crust turn dark - ready. This crust, before covering with cream, is cut off. You can also pierce the cake in the center with a wooden stick - if the dough does not stick to the stick, then it is ready. I also baked these cakes in a multi-cooker 20 cm in diameter, on the baking program, about 60-70 minutes I managed to bake. But in a slow cooker, the crust on top is less than in the oven. In the photo, two such cakes for a cake from the oven. I baked two because I wanted the cake to be big and tall for the DR. But it is quite possible to bake one.
- I decided to make cream from whipped cream. For my cake, I bought a liter of 33% cream. And separated the currant jam syrup from the berries to taste - about a third of a glass. Beat the cooled cream to stable peaks. When you enter the whipped syrup jam and continue beating. For the density of the cream, you can add a cream thickener or gelatin to it. But I didn't need it, because the cream was well whipped.
- If you need to add gelatin to the cream, then do this: Fill the gelatin with a small amount of water or milk, leave to stand for swelling 25-30 minutes. Put on a low heat, stirring, until the granules are completely dissolved. But, in any case, not to boil. Cool at room temperature. Pour the cooled gelatin in a thin stream into the whipped cream, continuing to beat them. It is advisable to prepare the gelatin before we start whipping the cream, so that it is already ready. Cream can also be made from sour cream, mixing it with currant jam - you will also get a good option, a little simpler, but no less delicious. Or make any other cream to taste, adding currant syrup.
