Interesting Spanish version of vegetable stew. According to legend, it was prepared by poor people from the La Mancha region — the birthplace of don Quixote and one of the poorest Spanish provinces (hence the name "Pisto Manchego"). I don't know what they served for the rich at that time, but it is very tasty, sharply piquant and bright in its variety.
