- Soak the gelatin in milk. Cream (!!! be sure to have a fat content of 33-36%, the fat content of the cream depends on the result of dessert preparation) warm up (do not bring to a boil), pour the swollen gelatin into the cream, stir well. Pour the hot cream (through a sieve) into the berry-curd mass, stirring constantly.
